New graduate program at Southeast Missouri State University addresses evolving nutrition standards
CAPE GIRARDEAU, Mo., (KBSI) — Southeast Missouri State University has introduced a Master of Science in Applied Nutrition (MSAN) program to meet evolving national standards for dietitian credentialing and address community health, sports performance and stress management through food.
The program combines academic coursework with 1,000 hours of supervised experiential learning, responding to new Registered Dietitian (RD) requirements that took effect in 2024.
The MSAN streamlines the process, enabling students to build clinical skills, complete practice hours and earn a graduate degree in a single, competency-based pathway.
According to Dr. Charlotte Cervantes, assistant professor and director of the didactic program in dietetics, the program prepares students to address real-world challenges in hospitals, health departments, school districts and sports teams.
Students benefit from hands-on learning environments, including commercial foods labs and clinical rotations, and provide nutrition education to diverse groups.
The program emphasizes a holistic approach to health, recognizing the power of food beyond the plate.
Public service and research are integral components of the curriculum, with students participating in community organizations and presenting research at conferences.
SEMO nutrition graduates have secured positions as registered dietitians in hospitals, public schools, wellness centers and collegiate athletic departments nationwide.
