SIU shows the science behind fermentation

CARBONDALE, Ill. (KBSI) – A Carbondale university showed the public the science behind fermentation.

A presentation and tour of the Southern Illinois University Fermentation Science Institute was held in Carbondale.

“We get a lot of interest from a lot of different groups, because everybody, you know, they know something about fermentation, but they’re interested in learning more about it,” said Matt McCarroll, a professor of chemistry.

Matt McCarroll is a director and professor of chemistry at the SIU Fermentation Science Institute. He spoke to the Southern Illinois Learning in Retirement group which is an education community of older learners.

“They’re interested in learning about the fermentation science institute and the construction projects and ongoing activities that we have,” said McCarroll.

Many groups are intrigued by the growing institute, which was developed in 2014.

“People are surprised to learn how many things are fermented products,” said McCarroll.

Whether it’s beer, sauerkraut or cheese; different groups from the community will get the chance to learn about its process.

“We also did a walking tour of our existing facilities,” he said.

Where a showcase was given of the construction projects, like the malt facility. It’s within this tour that the staff talks about the fermentation science degree program that they offer to prospective students.

Office administrator Susie Lightly shares what they do within the program.

“A hands on program where students can actually make and produce different products whether is beer wine or spirits,” said Lightly. “They’re making cheese they’re making yogurt. And we’re bringing in the community as part of that.”

So once the construction of the building is finished, they will be able to have a marketplace.

“And kind of make it a community environment so anybody from the SIU or Southern Illinois region can come and enjoy this building,” said Lightly.
